Comparaison qualitative de moûts issus de ceps exprimant différents niveaux de symptômes foliaires d’esca. Congrès International Wine Active Compounds 2017


L’étude présentée ici fait suite aux travaux initiés en 2012 par Lorrain et al. sur l’influence de l’ESCA sur la qualité du vin. L’objectif de ce travail est de réaliser un état des lieux quantitatif et qualitatif des baies issues de pieds de vigne exprimant des symptômes foliaires d’ESCA plus ou moins marqués. Ces premiers résultats confirment les travaux antérieurs (Lorrain et al., 2012).

L’ESCA modifie la physiologie du pieds de vigne en perturbant la maturité technologique et le rendement.

Néanmoins, il est important de replacer ces résultats à l’échelle de la parcelle, en tenant compte de la proportion de pieds symptomatiques afin d’évaluer l’impact des MDB sur la qualité finale du vin. Cette approche est la prochaine étape de ce travail.
